Jo's COOK BOOK #1 Bleached Blondies

I'm throwing in a recipe here, and it will be the first of many, since it seems a high topic of conversation recently. Mainly, recipes to my "Brit" favorites.

Today, though, an alternative to an American favorite -- the Brownie.

I'm sharing a quick and easy recipe for Bleached Blondies, my daughters favorites as chocolate upsets her stomach (lactose intollerant). I'm not taking credit for it, it's a recipe taken from my favorite recipe book (ATM) for a low sodium diet. It is a fab book filled with a varied collection of low sodium meals, deserts and starters. heck, they even have recipes for spice mixes and drinks.

The Complete Idiot's Guide to Low Sodium Meals (over 250 recipes) was complied by Shelly Vaughan James and Heidi McIndoo, R.D.

Bleached Blondies

1 cup of all-purpose flour
1 cup of granulated sugar
1 stick of softened butter
2 large eggs
1 tsp vanilla extract

Preheat over to 350 F
Grease 8by8 baking pan with non-stick spray
In a large bowl, combine all and beat with an electric mixer on medium speed for 3 mintues or until well blended.
Spread batter evenly in prepared pan and bake for 25 minutes, or until golden brown.
Cool in the pan then cut into bars.

TIP: add 1/4 cup of chopped walnuts and mix in with spoon after you have finished blending but before pouring batter into baking pan.

or 1/4 cup of white chocolate chips if no problems with chocolate

And heypresto - a tasty treat without too much effort.

    They're a family favorite here, served with ice-cream (or, if we have some in house, Brit Birds Custard)
    Do you have any suggestions for other quick and easy 'cake' recipes for me to try?
